Jelly Salad


Jelly Salad

Slightly sweet dressing for this fresh salad with creamy Bavaria cheese and fresh crisp apples. 
Definitely not low carb with all the sugars from the apples and jelly but refreshing, light salad.

Ingredients:

Head of green leaf or red leaf lettuce
Walnuts
Scallion optional
Havarti cheese cubed
Half to whole Apple cubed
3-4 tbs mayo
2 tbs olive oil
Big spoon jam, raspberry or berry


Directions:

Mix all ingredients except for dressing items For the dressing blend the mayo, jelly and olive oil until creamy, toss with salad. You can toast the walnuts if you prefer.

Sunday Kale warm salad



Sunday Kale warm salad


Makes/Yield: 1

Ingredients
  • 1 clove garlic
  • 1/4 Red Bell Pepper
  • 2-3 TBS olive oil
  • 2 TBS pine nuts or walnuts
  • 2 TBS raisins or cranberries
  • 2 cups Kale

Steps
  1. Sauté chopped garlic and mince red pepper in olive oil until soft
  2. Add kale and toss just until covered in oil and warm (a minute or two)
  3. Add pine nuts and raisins, salt lightly, serve warm



I call this a Sunday salad because the sugar in the fruits is a bit of an extravagance to be savored.
