Sunday Kale warm salad



Sunday Kale warm salad


Makes/Yield: 1

Ingredients
  • 1 clove garlic
  • 1/4 Red Bell Pepper
  • 2-3 TBS olive oil
  • 2 TBS pine nuts or walnuts
  • 2 TBS raisins or cranberries
  • 2 cups Kale

Steps
  1. Sauté chopped garlic and mince red pepper in olive oil until soft
  2. Add kale and toss just until covered in oil and warm (a minute or two)
  3. Add pine nuts and raisins, salt lightly, serve warm



I call this a Sunday salad because the sugar in the fruits is a bit of an extravagance to be savored.
